See this post as a quick snack idea rather than a life changing recipe…I do realise how easy it is to cover rice cakes with chocolate! I have been a little bit obsessed with chocolate covered rice cakes since I first spotted them in a supermarket around Christmas time but after a few months of buying them at a rather pricey £1.50 ish per pack of 6, I finally stopped being lazy and took the time to make some for myself.
It’s the Kallo dark chocolate ones that are my favourite (itsu and Nature’s Source are the other brands I’ve seen), probably because the rice cakes are super thin so when making them myself I also opted for the thin rice cakes. Mine were topped with Green & Black’s 70% dark chocolate and I used approximately 1 small square for each rice cake. For an extra kick I topped them with some jalepeño chilli flakes and a tiny pinch of salt before putting them in the fridge for about 10 minutes to set.
I’d consider these a guilt-free snack as the rice cakes themselves are only 18 calories each and dark chocolate is always a better option for satisfying sugar cravings. They are also gluten free and can easily be made vegan by using dairy-free chocolate.
I just made a small batch to start but I’ve still got plenty of rice cakes and chocolate left to try a different variation next time. I’m thinking maybe seeds, dried fruit and almond flakes mmm…
