I’ll always love flicking through a recipe book’s flawless photography or scrolling through the perfectly poised food that fills my Instagram feed but even more so, I love getting an insight into what people eat on the day-to-day. So, speaking of my favourite foodie topic, here’s what I ate on a day of uni work and gym-going, with something a bit experimental for dinner…
Breakfast: Coffee and oats
Blueberries and oats is my first choice. Every time. It’s my favourite way to start the day: so quick, so filling and full of energy. Speaking of energy, I then picked up a coffee to fuel me through a morning of uni work in one of my favourite Manchester cafes (more on that to come soon…)
Lunch: Scrambled eggs and veg
Lunch time post-gym is almost always eggs in some way shape or form. Today was scrambled eggs with spinach, mushrooms and tomatoes sautéed in coconut oil.
Dinner: Gousto’s Crispy Mushroom Dal
