Easter Cupcakes Two Ways (GF)

oneHappy Easter!! May your breakfast table be filled with eggs of both the chocolate and not-so chocolatey variety. I decided that Easter baking was a good idea and I tried out two decorations, as inspired by Pinterest. The bunnies were definitely my favourite but my family seemed to prefer the sheep, even if they didn’t turn out quite like the picture I had in mind. 

I used a Nigella recipe (find it here) to make a basic gluten free cupcake base and then I started by topping each cake with a spoonful of homemade buttercream icing.


The bunny ears were made from a marshmallow cut in half and dipped in pink sprinkles. So easy!


I used mini marshmallows to try and create a ‘sheep-effect’ and then made a face by adding black food colouring to a separate blob of icing. The eyes were just chocolate chips.


The cakes were piled high with icing and didn’t even taste gluten free. I think I may need to work on the sheep but the cupcakes were a perfect, fun treat to brighten up our Easter table this weekend.
